I don't know about you, but I am a sucker for any chocolate-peanut butter combination. Sweet chocolate and salty-sweet peanut butter: always the best pair. I actually have over 50 recipes of chocolate-peanut butter alone. Yes, I'm that obsessed. And recently, I've found this another addition to my collection: mini chocolate peanut butter cupcakes.
Since they're minis, they are easier to make and to consume. You can eat this in one to two bites. Plus, you won't be guilty of eating a lot! Start with chocolate cupcakes as the base. They are moist and fudgy, almost like a brownie. Inside these cupcakes are where the magic happens. Each cupcake is filled with a whole miniature peanut butter cup! These cupcakes are like adding even more chocolate to a chocolate-covered peanut butter cup. These cupcakes are already delicious, so I think frosting is not necessary. But you can always top them with chocolate or peanut butter buttercream. Chocolate or peanut butter ganache would be great too!
If you're familiar with baking chocolate cakes or cupcakes, you can see that there's always coffee on the ingredient list. This is to enhance the flavor of chocolate more. Coffee brings out the flavor of chocolate in the best way.
