Lemon cupcakes are the perfect spring dessert. They are usually topped with a whipped cream frosting as the lightness of the whipped cream compliments the cake. But I found this recipe the other day and it gave a new kind of frosting for these delicious cupcakes.
These lemon cupcakes are light, soft, and fluffy. They have a good lemon flavor coming from the zest and the juice. Then, they are topped with a delicious white chocolate mousse frosting. This frosting is so delicious, I could eat it straight out of the bowl! This frosting is a bit thicker since there is pudding in it. Also, the pudding mix helped the frosting to stabilize so it won't melt. Finally, sprinkle them with yellow sprinkles for garnish!
