Since you'll be topping each cupcake with banana, make sure to add them only when serving because they tend to turn brown when exposed to air unpeeled.
If you are familiar with making banana cupcakes, you are well aware that this recipe calls for really ripe bananas. So, if you don't have ripe bananas ready, here are a few ways you can quickly ripen a banana. Bake bananas at 300F for 15 to 30 minutes or microwave the bananas for 30 seconds.
However, if you already have ripe bananas, but you are not ready to bake yet, store your ripe bananas in the freezer.
