I used to hate carrot cupcakes, and to be honest, the only carrot cupcake that I've tasted is the one I've made. I'm not bragging or anything, but I was surprised at how delicious they are! Well, thanks to this recipe because I was able to make the most delicious carrot cupcakes ever!
I have no other basis of what a carrot cupcake would taste like, but I have a pretty good impression with the ones I made. These cupcakes are moist, soft and full of the carrot flavor. They are perfectly spiced with cinnamon, ginger, and cloves. The addition of golden raisins gives the cupcakes a little bit of texture. Some recipes use walnuts or pecans, so you can use that instead. Finally, they are topped with a classic cream cheese frosting, which in my opinion, compliments the cupcakes so much! As for the garnish, you can decorate these with orange sprinkles or any kind of sprinkles that you want. If you can find mini carrot candies, you can use that as well.
