These carrot cupcakes are moist, dense, and absolutely delicious. They are perfectly spiced with cinnamon and mixed spice. A carrot cupcake will never be a classic dessert without a sweet but tangy cream cheese frosting. Finally, top with chopped walnuts for garnish.
Topping these with walnuts will give the cupcakes a bit of a crunch, but I prefer mixing in the walnuts to the batter for a better taste!
