Pineapple is almost everyone's favorite summer fruit. I love them so much, that whenever I eat them, it reminds me of a good summer day at the beach. Well, if you're like me and crazy about pineapples, you will go crazy over these cupcakes even more!
These pineapple cupcakes are easy to make since it uses a yellow cake mix. All you have to do is to add a can of pineapple to the batter to give it a flavor. These cupcakes are already delicious, but for this recipe, they are topped with a sweet vanilla bean frosting and garnished with flowers and sprinkles.
However, you can decorate these cupcakes any way you like. You can top them with candies, toppers or even leave them as it is! Additionally, vanilla bean frosting is a delicious frosting, but you can top them with anything you want. You can top them with a regular buttercream frosting or a whipped cream frosting. I would add a half of a teaspoon of pineapple extract to the frosting to enhance the pineapple flavor.
