Pistachio is an underrated flavor in the dessert world. But I do know that pistachio makes a delicious dessert because we have it in ice cream, cake, cookies, and now with cupcakes. So, if you are a pistachio lover, you will definitely go crazy over these cupcakes.
Start with vanilla cupcakes as the base. These cupcakes have pieces of pistachios in it. Pistachio, vanilla, and almond are three flavor combinations that work so well together. These cupcakes are soft, light and moist. They are made even better with a sweet strawberry frosting and garnished with a strawberry slice.
What I like about this recipe is that it's 100% naturally flavored and colored, and no artificial flavoring. The flavor of the pistachio all comes from the ground pistachio. The pistachio flavor isn't too strong, but if you'd like, you can always add a bit of pistachio flavoring. As for the frosting, it's naturally flavored and colored by using freeze-dried strawberries. I always opt for no artificial flavoring desserts, so if you're like me, this recipe will be your safe ground.
