I am in love with these cupcakes! The cupcakes are soft, moist, and tangy. The lemon flavor is so strong all because of the lemon zest! Then, they are topped with a classic cream cheese frosting and a sunflower topper which you can make ahead of time!
The sunflower toppers are easy to make! They are made with royal icing and mini Oreos! Since these need to set, you can make them a few days before you make the cupcakes. Store them in an airtight container and they can be used as toppers when you need them to. Aside from being cupcake toppers, they can just be eaten like a candy on the side!
The flowers might be intimidating to pipe, but don't be! If you have a Ziploc bag and a pair of scissors, you can make them too!
