This recipe is super easy and simple! You'll have fun making these, even with kids! These cupcakes are moist, dense, and you can see the fresh raspberries in these cupcakes! If you like fillings in cupcakes, fill each cupcake with raspberry jam. Then, they are topped with delicious Italian meringue buttercream. Finally, top with a raspberry!
Baking with fresh fruits might be a bit tricky since they might sink down in the cupcakes. What you can do is to cover these fruits with flour, make sure they're all coated. You can use a part of the dry ingredients that you'll be using. Once they are covered, mix them in the batter and you're good to go!
This recipe is really flexible. If you prefer another berry fruit, you can use that instead.
