Peanut butter sandwich with banana is my favorite snack as a kid. I still eat it to this day and I still love it! And when I came across this recipe last week, I felt so nostalgic and totally reminded me of my favorite snack growing up!
These delicious cupcakes are easy to make! Start with soft and moist banana cupcakes as the base. In my years of baking, the way to achieve soft and moist cupcakes is by using buttermilk. If buttermilk isn't available to you, you can totally make your own! For every 1 cup of milk, stir in 1 tablespoon lemon juice or vinegar.
These cupcakes are topped with a smooth peanut butter cream cheese frosting and chopped Butterfingers. You can also top them with dried chopped bananas for more flavor!
