These carrot cupcakes taste as yummy and delicious as a chocolate cupcake! Although it contains carrot, it is not “carroty”. The carrot flavor is overpowered by the high caramel of brown sugar. Also, these cupcakes are moist and slightly crumbly, something you want in a carrot cake. Finally, they are topped with a delicious pineapple cream cheese frosting. You can leave them as it is or decorate them however you like!
Some may not like the flavor of pineapple, so if you don't prefer this kind of frosting, you can just use the classic cream cheese frosting!
