Have you ever tasted shamrock shake from McDonald's? They're this bright green, vanilla and mint flavored milkshakes that McDonald’s rolls out for St Patrick’s Day every year. If you haven't had this yet, you can actually make them at home. But in cupcake form!
The cupcakes are moist, dense and flavorful, with just the right amount of mint. They are made even better with a whipped cream frosting. You can use a buttercream frosting, but I feel like whipped cream frosting gives more of the milkshake vibe. Finally, top with green sprinkles and a short straw and you're good to go!
Since these are topped with whipped cream frosting, make sure to frost them only before serving. Whipped cream frosting tends to melt if placed in a humid place. But if you'd like to frost them ahead of time, store the frosted cupcakes in the fridge to chill.
