Every now and then, I try to make a delicious after dinner dessert for my family. And whenever I announce this to them, they would always request for chocolate raspberry cupcakes. I perfectly understand why they love it so much!
These cupcakes are delicious and divine. The chocolate raspberry cupcakes are made with a cake mix, but they are moist and soft all because of the oil and buttermilk. They are made even better with a delicious and all natural raspberry buttercream. Finally, top with a raspberry for garnish!
As you can see in the recipe, there are raspberries added to the batter. Instead of doing this, fill each cupcake with raspberry filling! You will need raspberries, water, sugar, lemon juice, and cornstarch. Mix these all together and when it reaches to 20 minutes, reduce the heat to low, and add in the cornstarch and water mixture to thicken the mixture. Let it cool and you can now use it as a filling!
