You can never go wrong with cake, coffee, ice cream, and Oreo. I love all of these individually, and I know they'll taste amazing if combined. Luckily, this recipe will show you how you can do that!
These cupcakes are what I would want any time of the year! Start with chocolate cupcakes as the base. When baking, scoop only two to two and a half tablespoons of the batter, because you'll need the extra space in the liner for the coffee ice cream. After baking, you need to let the cupcakes cool completely before adding in the ice cream, so, put them in the fridge to cool faster. Then, scoop in the ice cream, and pop them in the freezer to set. After one to 2 hours, get the cupcakes, then top them with chocolate ganache and let it set in the freezer once again. Finally, top with crushed Oreo cookies for garnish. These delicious cupcakes will give you everything that you want in a dessert.
Additionally, if you don't like coffee ice cream, you can always replace this with whatever flavor you'd like.
