Unlike other recipes, this recipe uses a reverse creaming technique. Instead of creaming the butter and sugar first, you drop the butter into the dry ingredients, mix it, then add the liquids in two batches. This technique results in a finer crumb and moist cake. The cupcakes have a strong lemon flavor, so if you're a fan of lemon, these cupcakes are for you. However, if a strong lemon flavor isn't your thing, you can always substitute the lemon for orange or sweet Meyer lemons. Then, they are made even better with a sweet lemon buttercream frosting.
