If you've never had green velvet cupcakes, now is the time to try it! They're basically just velvet cupcakes but in a different color. I figured these would be the perfect treat this holiday. Similar to a red velvet cupcake, these cupcakes are moist, soft, and flavorful. I know velvet cupcakes are commonly topped with a cream cheese frosting, but these cupcakes are topped with a cooked frosting instead. Finally, top with shamrock sprinkles and you're ready to serve!
I know, cooked frosting sounds weird, but it's delicious and perfect! The way to do this is to cook milk and flour together until the mixture becomes thick. Let this cool, then, cream butter and sugar, and add in vanilla extract. Once it's all combined, mix in the cooled cooked mixture and beat until combined. This cooked frosting would also be perfect on any kind of cupcakes!
