When I think of spring, all I want to bake are lemon cupcakes. I don't know why, but there's something about lemon cupcakes that brighten up a spring day.
Start with lemon cupcakes as the base. Although made with a cake mix, they are perfectly moist, soft, and of course, delicious. Any kind of frosting would be perfect for this, but this lemon cream cheese frosting totally compliments the cupcakes. Finally, top with yellow sprinkles or a candied lemon!
