Halloween is a fun occasion to play with designs that I can use for my cupcakes. I've tried plenty in the past, but this one has become my favorite.
These meringue ghosts are super cute, you might not want to eat them! These are so fluffy, soft, and almost taste like a marshmallow! These are good toppers for cakes and cupcakes for Halloween!
However, meringues are challenging to make. I've tried this multiple times and during my first few attempts, I couldn't even do it right! I sure wasted plenty of eggs at that time! But eventually, I come to terms with meringue and finally made my first successful batch!
Few things I learn from this is to keep all bowls, whisk, and spatulas super clean. Also, before whipping the eggs, wipe the bowl and whisk with vinegar. One method I also learned is to pop the sugar in the oven for a few minutes, slightly turning them into brown. Before you add in the sugar, make sure the eggs reached its stiff peaks. You can test this by placing the bowl over your head and if it does not fall out, you're ready to add the sugar. Risky, I know, but that's the only way I am sure they are ready. Also, if you choose to color the meringue, make sure to use only color food gel so the mixture won't thin out, otherwise, it will lose its stiff shape.
Meringue sure takes a lot of practice. So, be patient and believe you'll get there!
