These cupcakes are basically banana cupcakes leveled up with carrots, or vice versa. Start with banana carrot cupcakes as the base. If you've been baking banana cupcakes for a long time, you know very well that it is a must to use very ripe bananas instead of the fresh ones, so make sure to only use ripe bananas! The cupcakes are filled with flavors of both bananas and carrots. Banana and carrot cupcakes are supposed to be really moist, so the buttermilk does the trick here. They are then topped with a delicious coconut cream cheese frosting. If you're serving this to people who don't like coconut, just omit the coconut extract and toasted coconut flakes.
